case study mobile kitchenStewart’s Mobile Concepts challenge was to provide a temporary kitchen facility and café to service up to 600 employees all their meals each day for a 6-month period at the Apple Inc. Austin, TX compound while their new café was being renovated.

To handle the project we utilized our K-283 Model 48’ Mobile Kitchen Trailer accompanied by (3) 8’x 20’ Dual Temp Walk-in Units, and (1) 36’x 56’ Modular Unit which functioned as the main café serving area for all Apple employees. Custom aluminum decking, ramp, and stairs were fitted on site to facilitate kitchen staff, and work flow between all units. Also grease traps and gray water holding tanks were installed to handle gray water pump out and removal with no existing septic system to tie into for this project.

Fox News @ The Republican National Conventions

case study mobile kitchenStewart’s Mobile Concepts was selected by Fox News as their mobile kitchen provider and production caterer at Republican National Conventions at First Union Center Philadelphia, PA (August 2000) and Excel Energy Center, St. Paul, MN (August 2008). We provided remote site production catering through our sister company, Corinne’s Concepts in Catering, to the entire Fox News Production Crew for over a 2-week period at both Republican National Conventions. Over 7,000 meals were served during each of these prestigious events to keep the Fox News cast, production crew, security personnel, and VIP’s well feed and comfortable within the Fox News Media Compounds. Kitchen and wait staff, as well as, mobile kitchens, temporary buffet set-ups, salad bars, refrigeration, freezer, dry storage, preparation, scullery areas, and bathroom trailers were coordinated, installed, and later demobilized to ensure the success of each event. Serving tents were also erected. Electricity was provided via generators. Potable water was directly connected to the kitchen trailer, as well as the bathroom facilities. Waste water holding tanks were set up and pumped two times per day by a local cesspool company.

United States Coast Guard Stations - SFO Galveston & Sabine Pass Texas

case study mobile kitchenThe US Coast Guard protects the security of our borders as well as the safety of our shores. In 2006, due to the coastal devastation of Hurricane Rita, SMC was called into provide a mobile kitchen to USCG Station Sabine Pass during an extensive 19-month main kitchen renovation.

Then again in 2008, due to the unfortunate events surrounding Hurricane Ike in the Gulf, SMC was awarded a 13-month contract to provide temporary kitchen facilities at USCG SFO Galveston, TX to ensure that our service men and women where kept happy and well fed. The temporary kitchen facilities consisted of (1) 40’ K-397 model mobile kitchen, a 24’x 64’ modular dining room, (1) 8’ x 10’ walk-in cooler, and (1) 28’ dishwashing trailer.

CBS Sports US Open Tennis Tournaments

case study mobile kitchenCBS Sports Production Caterer August, 2005, 2006, and 2007. We provided off-premise catering services through our sister company Corinne’s Concepts in Catering to the entire CBS Sports production crew, television cast, VIP’s, local police and security personnel at the US Open Tennis Tournament, United States Tennis Stadium in Corona, New York for three consecutive years. Handled all food service, cooking and support staff. We coordinated all the necessary support equipment and fully equipped mobile kitchens to produce and serve all the meals in a professional, safe, sanitary as well as appealing environment. Over 10,000 meals for breakfast, lunch, and dinner meal periods were served each year during a 3-week period. We have also handled a number of LPGA golf production catered events for CBS Sports with full food service, including the HSBC Women’s Golf Championship in Gladstone, NJ (2005, 2006), and New Rochelle, NY (2007).

case study mobile kitchenAt SMC we take emergency situations very seriously, and when a tornado devastated this town and destroyed most of the elementary school including the main kitchen and cafeteria areas. Stewart’s Mobile Concepts answered the call immediately and coordinated an overall 18-month lease package consisting of (1) 48’ mobile kitchen, (1) 24’ x 60’ temporary cafeteria complete with bench tables and bathrooms, 240 sq. ft. of walk-in cooler and freezer space, as well as a (1) 8’x 20’ temperature controlled dry storage unit. Custom decking, ramps and stairs were also provided for staff and students to navigate the complex.

Sea Ray Boats

case study mobile kitchenWhen Sea Ray’s caterer called SMC for the right equipment to pull off catered events for 600 guests while launching the year’s new line of boats, we answered with (1) large fully equipped 48’ x 8’ mobile kitchen complete with landings, ramp and stairs to meet their challenge. One of the unique menu items served was fried whole turkey carved to order. The 40-gallon tilt skillet in this high volume kitchen was able to efficiently handle 12 whole birds at a time!

Temple University Hospital

The kitchen trailer was professionally blocked and leveled to over come the slope and height of the loading dock to seamlessly match the interior mobile kitchen floor to loading dock floor level. Satellite auxiliary propane tanks were brought in and retrofit to the trailer and all the other utilities including electricity; fresh water and waste water were tied into the building systems.

To meet Google’s larger than normal feeding situation we provided them with a large production capacity 48’ x 8’ Mobile Kitchen to take care of the employees while their new kitchen and cafeteria were being constructed over an 18-month period.

case study mobile kitchenIn April of 2010 a massive fire destroyed this family owned and operated restaurant, grocery, bakery, and craft shop that has been in business since 1955, located in the heart of Belleville, PA.  This landmark establishment is one that many locals rely on for goods and services that are not as readily available to more of the metropolitan areas of the country. As soon as Stewart’s Mobile was contacted to provide equipment to get the operation back up and running, we immediately responded and provided them with (1) large 48’ mobile bakery kitchen trailer, (1) 40’ mobile kitchen trailer, (4) 8’ x 20’ walk-in coolers and freezers, numerous temporary bathroom trailers, including an ADA compliant unit, as well as, temporary climate controlled dry storage, and office space to meet the needs of the client during this difficult time. The equipment was on lease for over 16-months to complete the engagement.
